2023年十一月下旬因為工作關係我跑了一趟風頭水尾、鳥不太生蛋、但每部汽車都配備超強自動關門系統的彰化福興。但裡面臥虎藏龍的是:就像彰化的水稻產量不是全國第一而且距離遙遠,但卻是全國第一大糧倉一樣,彰化的地瓜產量也不是第一,但我們國內最大的地瓜批發商就隱身在掀頂強勁海風終年呼嘯的福興鄉裡。我這個門外漢也有了個機會入門初探地瓜這個布衣高手的絕世武功~~~。

地瓜:正名甘藷,英文名好聽(sweet potato),其實是外來種(看另一個名字蕃薯就知道了),400年前(歷史記載於1624年)從墨西哥→歐洲→大陸,從福建坐船來台灣定居。

幾乎全台灣全年都可以種,還有進口貨。品種可以細分近20種:粗分地瓜有黃肉(台農57號)、紅肉(66)、紫芋(73, 不是周子瑜),地瓜葉又是另一系列的品系。

地瓜含有充足的澱粉(剝開看長相就知道了),但食用熱量低.。只要用簡單的料理+吃法調整,你要用來增胖或是減肥都可以,有點神奇吧~~~。
4.
營養價值高,尤其CP值超高(太便宜)。除了富含多樣的植物性蛋白質,維生素A、B1、B2、C,多種微量元素,還有視品種而定的胡蘿蔔素、花青素。
5.
地瓜夙有威名的養生功能:一是高品質膳食纖維(一種黏稠的果膠,簡單說除了腸道掃地、還有拖地功能);二是生理鹼性(胃內中和肉類等酸性食品)。
6.
最後是我個人最欣賞的產業價值:除了全年/全國可種;對地力的損耗很小,所以拿來輪作、裡作也可以(不像薑、人參一種下去就得休耕1~20年);產品用途廣跌價風險低,人吃的賣不出去可以做食品加工配料/動物飼料/乃至於提煉酒精(不會像香蕉、高麗菜賣不出去只好整批翻作堆肥);也是個難得的國安武器(可視為進口玉米大豆的替代品)......。

In late November
2023, due to work, I took a trip to Fuxing, Changhua—a place known for being
remote, where birds rarely lay eggs, but every car is equipped with an
automatic door-shut-down system. However, what truly surprised me there was the
hidden gem: although Changhua's rice production isn’t the highest in Taiwan and
the region is distant, it is still the nation's largest grain supplier.
Similarly, Changhua isn't the leading producer of sweet potatoes, but Taiwan's
largest sweet potato wholesaler is located in Fuxing Township, where strong sea
winds constantly blow. Even as an outsider, I had the opportunity to explore
the incredible “martial arts” of this humble sweet potato master.

Sweet
potato: Known and pronounced as "Gan-Shu” in Mandarin, its English name is
quite elegant (sweet potato). It’s actually an introduced species (as its other
name, "foreign yam (Fan-Shu)", suggests). It were brought from Fujian
by boat and arrived in Taiwan about 400 years ago (record written in 1624), and
can be traced with a prior long journey from Mexico via Europe and to mainland
China.

Sweet
potatoes can be grown almost all year round across Taiwan, and there are also
imports. There are nearly 20 varieties, categorized broadly into yellow-fleshed
(Tai-Farm No. 57), red-fleshed (No. 66), and purple-fleshed (No. 73). Sweet
potato leaves are planted with the seeds in another whole different category.

Sweet
potatoes are rich in starch (just break one open and you’ll see), but they are
low in calories. With simple cooking and eating adjustments, you can use them
for weight gain or weight loss. Isn’t that amazing?

They are
highly nutritious, with an excellent CP (cost-performance) ratio (super
affordable). Besides being rich in various plant proteins, sweet potatoes also
contain vitamins A, B1, B2, and C, a variety of trace elements, and, depending
on the variety, beta-carotene and anthocyanins.

Sweet
potatoes have long been renowned for their health benefits: First, they are
high in dietary fiber (a type of sticky pectin that not only sweeps the
intestines but also mops them, so to speak). Second, they are alkaline-forming
(neutralizing the acidic foods like meat in your stomach).

Finally,
what I personally admire most is their industrial value. Sweet potatoes can be
grown nationwide and year-round. They also don’t deplete soil nutrients as
much, making them suitable for crop rotation (unlike ginger or ginseng, which
require the land to lie fallow for 1–20 years after planting). The uses for
sweet potatoes are vast, reducing the risk of price drops. If they aren’t sold
as food for humans, they can be used for food processing, animal feed, or even
ethanol production (unlike bananas or cabbage, which might just be turned into
compost if they don’t sell). It’s even a rare national security asset (as a
potential substitute for imported corn or soybeans).
